I loooooovee the caramelized shallot and anchovy recipe, make it all the time so I ordered the jarred sauce to see how it’s originally made. The tomatoes used are amazing and incredibly sweet, no added sugar so I loved that part. But I never once tasted anchovy or shallots. The fennel sauce is just as sweet and I liked the whole slivers of garlic but just not very flavorful. Maybe I got the bottom of the pot? I’m not sure but very disappointed. Now I have to keep on cooking the original recipe and I hate to cook.

So the sauce is inspired by Shallot-Anchovy, but that’s more of a paste and less of a sauce, so it’ll always read as more acidic and anchovy-y than any sauce with the same ingredients. This sauce definitely has more tomatoes in there (which are sweeter than a paste, which is a concentrate, so it always reads as more acidic). I can personally attest there are plenty of caramelized shallots in there (which contribute to the sweetness) and just as many anchovies as the original, though for scaling purposes it might always read differently. We’d love to send you another jar of each flavor to see if it was maybe just a weird batch (could happen!) but if not, we can send you 6–8 shallots for making your own.
